Some of my favourite baking recipes - more to follow
Lemon Bake
6oz butter
6oz caster sugar
6oz self-raising flour
2 eggs
Topping
Juice of 1 lemon
4oz caster sugar
* Cream the butter and sugar until light and fluffy
* Work in the beaten eggs and flour to make a smooth batter
* Put into a greased 10x7in tin
* Bake at 180°C for 40 minutes
* While the cake is baking, mix together the lemon juice and sugar
* As soon as the cake comes from the oven, prick the top lightly with a fork
* Spread on the lemon mixture to cover the cake completely
* Cool in the tin and cut in squares
* The lemon juice sinks through to flavour the cake and the sugar forms a crisp topping

8oz margarine
8oz dark brown sugar
6oz syrup
1lb porridge oats
Makes 16 pieces
* Melt margarine, sugar and syrup in large pan
* Remove from heat and add oats, mix thoroughly
* Line a 9x9in baking tin with parchment and spread mixture on to base
* Bake in oven 180°C for about 20 mins
* Leave to cool for ½ an hour then score with knife
* Leave to cool completely in tin

Somerset Apple Cake
1½oz margarine

½ grated orange rind
½ lb bramley apples
1 tablespoon milk
1oz sultanas
Topping
1 dessertspoon sugar
* Peel, core and dice the apples. Put in a bowl with a little of the flour
* Cream the margarine, sugar and rind. Put egg and milk into bowl and beat well
* Add flour, diced apples and sultanas and blend well with a metal spoon
* Put into a greased 7x7in baking tin
* Sprinkle with the dessertspoon of sugar
* Bake at 190°C on the middle shelf for 30 minutes
